Here at Nonette, we harmonise the 3 hallmarks of an elevated Banh Mi – decadent fat, succulent meats, and fresh herbs and crunchy house made pickles.

Our menu traverses 3 parts of the world – South East Asia, Europe and North America – combining a palate of diverse flavours and cultural influences at a one-stop shop for frankly fantastic, elevated banh mi and addictive donuts.

Bánh mì? Who is she?

Born in Vietnam, the Bánh Mì is just as iconic in Paris. Popular for many years, it is the ultimate grab and go street food with white baguette, marinated meats, crunchy carrots and cucumbers, and fresh coriander.

At Nonette, Chef Khanh-LyHuynh transcends the basics of Bánh Mì with her mastery as a seasoned chef and responsible sourcing. With the exception of AOP bread and butter, everything else is 100% homemade. Thit nguoi ham, chicken liver pâté, dried chicken, dried pork, shredded marinated chicken, carrot pickles or even vegan tofu mayonnaise – she will stop at nothing to offer the most authentic Bánh Mì possible. So authentic that each of them has a lucky number – a nod to Hanoi’s Bánh Mì.

Co-founder and friendly face behind all of Nonette’s operations and The Hood’s. Pearl hails from Singapore, the ultimate culinary street food capital so she definitely knows what’s up! Passionate music lover with secret piano skills. Unofficial ambassador for pandan in Singapore, Paris and beyond.

KHÁNH-LY HUYNH

Co-founder and creative culinary mastermind behind Nonette and The Hood (and also, former MasterChef champ). Franco-Vietnamese with American influences – just like Nonette’s menu. She picked up French techniques at the Institut Paul Bocuse, combining her Asian ones to create the unique dishes you know and love at The Hood. Undisputed queen of sambal and all things spicy.

We collaborated with Alexis Taieb (Tyrsa), a regular at The Hood.

In Spring 2021, we discussed how Nonette should look - inspired by Vietnam’s food stands, rooting our aesthetic in nostalgia while giving it touches of French modernity.

The colour scheme for Tyrsa and Nonette reflects the colours of the Banh Mi:

“ the peach references the ham, carrots and bread complemented by green cucumber and fresh herbs”
